Have You Ever Been Bushwacked?

During my first trip to St.Thomas, US Virgin Islands I was Bushwacked every day!  On our second day at our resort a friend and I were sitting at the beach bar and the bartender Shirley was busy making this drink for another customer. The drink looked so good I had to ask her what it was and she said, “a Bushwacker”.  My friend and I looked at each other and we both said, “we’ll try one of those!” Well, that was the beginning to our nine days of being Bushwacked!  We had a few of them every day along with some delicious buffalo wings.  That was our daily afternoon indulgence  feeling very nice, eating, drinking, talking and laughing for hours.  I had such a great time! The Bushwacker is a cocktail invented in 1975 at a bar called The Ship’s Store/Sapphire Pub in Sapphire Village, St.Thomas, USVI.  It is similar to a creamy, chocolate piña colada.  The original recipe called for Vodka, Kahlua, Dark Crème de Cacao, Coco Lopez (cream of coconut), a splash of Triple sec and milk in a blender with ice and topped with a grating of fresh nutmeg.  Below is our version, but drink with caution! 😁

Beach Bunn’s Closet Bushwacker Recipe

1 ¾ oz  of Vodka

2 oz of Kahlua

1 oz of Bailey’s Irish Crème

1 oz of Amaretto

2 oz of Cream of Coconut 

1 ½ large scoop of vanilla ice cream

1 ¾ to 2 cups of ice

1 splash of white rum (We prefer Cruzan Rum)

Whipped cream

Sprinkle of nutmeg

Place all ingredients in a blender except for the white rum, whipped cream and nutmeg.  Blend until frothy (make sure all of the ice is crushed and blended) pour into a tall glass like a hurricane glass. Pour the splash of white rum on top, add whipped cream, sprinkle nutmeg and decorate with a piece of your favorite fruit.  Now you are ready to get Bushwacked! 😜
